Methode traditionelle style sparkling. A mix of Chardonnay and Pinot Noir from Tumbarumba. The wine is aged for 3 years on lees. Manuka honey, freesia and white peach. Some notes of lemon yoghurt and soft round cheese invoke those savoury notes, so too is there enoki mushroom which underlies the citrus and stone fruit. This has a wealth of detail and some smoked salt crunch. Chardonnay fruit delivers power and robust ripe fruit with Tumbarumbas cool climate adding length and energy to the fine acidity. A wine that has developed complexity in the bottle and could be served from aperitif all the way into the main course. Go for fried snapper with a Thai marmalade or sweet jam over the top.
