A sultry sulfite note opens swiftly making way for sparkler dust on lemon cream icing. There is pomelo and candied lemon skin, nectarines and white peach. Zesty with linear and laser focused acidity that feels well embedded into the body of the wine, not forced but innate. A stony, pumice like minerality and a spray of tea rose florals. This is the kind of energetic Tumbarumba and modern Australian Chardonnay that you could drink every day. This will also age slowly and continue to show you more detail over the next 5-8 years. A wondrous wine. Pair with salt and pepper squid or a Fritto Misto di Mare platter.
