Matured for 18 months in 300L hogsheads. This wine speaks of the cooler growing condition in Eden Valley clearly. A wine with unique spice and dried herbs, but first there is the plum and mulberry fruit laden with carob and dried cherries. Anise herbs, dried thyme, sage and bay leaf make themselves known. There is a coolness to the acidity that keeps the wine from being heady or from throwing the savoury elements in front of fruit. Lachlan Duncan suggested moussaka as a wine pairing and I couldn’t agree more. Drink now or cellar for a further 4-8 years for more of those intriguing herbs and forestry to come through.

Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
