At four years of age, this is showing some tertiary tones of cheesecloth, bitter almond and hay along with some subtly sweet pops of honeysuckle on first look. A swirl of the glass unlocks preserved lemon, fig, spiced pear, poached apple and subtle pastry dough to fill it all out and complete what is an attractive picture. The palate has nice texture to wrap around preserved lemon bitterness, poached pear, and apple skin with a leesy dough sensibility beneath. There’s grip to the sides of the back palate, with the preserved lemon bitterness attached and drawing to medium length. It feels gastronomic at this phase of its life as the fruit is subsiding, with the bitter notes adding interest. I’d wait no longer, however.
