A spicy and incredibly savoury wine, the Foothills is a bit of a chameleon, changing in the glass as it breathes over a few hours. It opens with red cherry and raspberry, before throwing lashings of beetroot, rhubarb, cardamom and some stemminess, with a damp forest edge giving it an intriguing and highly interesting character. It’s quite easy to drink, particularly when paired with something with a touch of spice, like a curry, while also going down really well with some sharp-tasting cheese. Give it a few more years in bottle for even greater rewards.
