Cabernet Sauvignon and steak are a reliable and satisfying pairing proposition. This wine has a bouquet of ground coffee, chocolate milk, black pepper and sage. The palate is deliciously silky, layered and flavoursome, and the powdery texture indicates that it’s at peak drinking. Full bodied, flamboyant and opulent, it showcases the natural age-worthiness of Langhorne Creek Cabernet Sauvignon, at an accessible price. Once combined with the medium rare scotch fillet, it certainly elevated the experience a notch. The marble and juicy meaty texture allowed the wine to reveal a core of fruit, with ripe plum and blueberry, thereby expressing a more diverse, attractive and enticing personality than without food. As I blended the salad with the wine, the herbal edge appeared subtlety, with notes of dill and mint. A seriously great value mature Cabernet sauvignon full of glory. A terrific winter warmer.
