La Kooki Boya Chardonnay 2021

There’s a lot to love about this wine. Gingin clone Chardonnay at its finest, offering pink grapefruit,  sea spray, oyster shell and white peach skin. It’s a tight, flinty wine with brisk freshness and great backbone. Complexity and texture builds from a curious technique of topping the barrels with a  collection of granite stones, then regularly rolling them to stir the lees through the wine. (The name ‘Boya’ means ‘stones’ in Noongar, the language of the local Wadandi people.)  Chablis-esque and delicious.
