Picpoul is a quirky grape variety originating from the south of France, where it is made into crisp, refreshing white wines. Here it is partnered with Prosecco grapes, from the cool climate of the Adelaide Hills, where it adds an extra layer of freshness and complexity. There are aromas of spring blossoms, tangy green apple, nashi pear, and lemon zest, with a hint of fig leaf and a refreshing sea breeze minerality. Vibrantly bubbly with tangy green apple acidity makes for a beautifully dry and very moreish drink. A hint of pithy texture invites fresh seafood to the table. It’s an unusual blend, perhaps the only Picpoul Prosecco in the world, and for my part, I’m hoping it becomes a trend.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne. Stints in hospitality, wineries, retail, sales and marketing filled the next few years while Nicole built her knowledge and searched for the right path. She completed the Wine and Spirits Education Trust (WSET) Diploma in 2016 and became a certified WSET Educator the following year.
