Sourced from a biodynamically farmed block and fermented in a combination of clay amphora and French barriques of which 20% is new. A purity of blackberries, top of the tree ripe mulberries and raspberry compote. Subtle bay leaf and thistle.  I am surprised to find this is 100% Cabernet with the balance of fine silky tannins, energetic acidity and the full spectrums of red and black fruit. It’s sophisticated and elegant, plush and juicy. Succulent and moreish. Sublime fruit quality shines here with careful handling of oak and vessel choice. Drink now and will cellar 10-12 years. Delightful drink on its own but a seared cube of high marble score wagyu would not be kicked out of bed!
