Made of 80% Garnacha, 10% Carignan, and 10% Syrah. The vine age is between 10 and 20 years old. Grown on steep slate lined hillsides and clay limestone soils. Fermentation occurs in stainless steel tanks and matures for 4-6 months in 25% concrete, 25% large oak vats and 50% French barrels. A symphony of black plums, cassis and salted licorice. Granite and hard black soils meet with fragrant rosemary buds. There is good lift and carry of fruit, dotted by sandy poignant tannins, you’ll then be swept off your feet by a cuddly pillow of blue fruit as well that sits in the middle palate. Subtle oak cradles the wealth of ripe fruit. This is addictive and plentiful in pleasure. Drink now or will cellar well for another 5-8 years. This would please many discerning palates. Perfect with beef tongue on bao buns and hoisin sauce.
