Abundantly floral with elderflower, Acacia and white lilies. The wine combines green apple skin with very distinct lemon thyme. Like stripping the stem with your hands, this wine fills your senses with delicate herbs of the garden and springtime freshness. Wet stone and running river stream. Acute acidity without the sour zing, a touch of pithy powdery tannins. It finishes dry but I spy a sliver of fruit nectar remaining, just the slightest, and it’s beautifully balanced. An intriguing wine that is drinking well now and will cellar for 5-8 years and keep improving. Drink with baked salmon, roast potatoes and lemon thyme butter.
