Nick Spencer has been sourcing fruit from the high alpine region of Tumbarumba, New South Wales for some time. The region was planted to produce sparkling wine fruit and with vine age, now produce some stunning table wines. Nick thinks that while Tumbarumba was originally a cool to cold climate, it is getting too warm for Pinot Noir, but just right for Gamay. P.A.R is an acronym for Prospectus Adspice Respice — look forward, be present, respect the past. Nick states that this is the ‘mindset behind the label.’ Maturation for the wine completed in 200L amphora. Fruity with a serious underbelly: red cherry and ‘fruits of the forest,’ young fresh leather, bresaola, slightly sweaty brown spice, mature cloth cheddar rind, pink chalk and salted warm edamame with a hint of rum n’ raisin choc. Keenly displaying a medium weight balancing spiky spice, silky tannins and crunchy fruit. Juicy through the tail for moreish pleasure.
