Fruit is sourced from Rising Vineyard in the northern Yarra Valley. Partial malo, fermentation in French barriques and extended lees aging and battonage. White apple flesh, pomelo and grated lime skin. A note of dry sand stone and fennel seed. This is zesty with some nougatine creaminess and lightly toasted almond spice. Acidity pushes the wine into some finite angles with a subtle hint of creamy cashew on the finish. Try this with cauliflower and comte bake. Drink now or will cellar for another 3-4 years.
