Fruit is from the Acacia Park Vineyard, 80% transferred to French barriques for fermentation, lees stirred and a portion was cool fermented in stainless steel. A real style choice here for the Gris, with oak fermentation bringing out the ginger root tones, backed by poached pears, yellow apple and quince. There is a beeswax note that moves into the strong aromas of jonquil flowers. This is decidedly fleshy and rich, with perky acidity adding freshness to the middle palate. Alcohol is held at arm’s length keeping the drinkability of this wine fitting for buttery fish dishes like dover sole and lemon. Drink Now.
