Cabernet can sometimes skew overly intellectual, with savoury-tones and firm structure confusing the unassuming-everyday-punter. But then there are wines like this 2020 Passel Estate Cabernet. The fruit is bright, with raspberry bullets and strawberry skins, mulberry jam and blackberry jubes. There’s a lot going on here, especially aromatically, but the wine feels settled. Stoic, even. The palate leans savoury, with wild raspberry bush, quandong, bark and toasted gum nuts.The tannins are squeaky like raw cacao powder, and the acidity is bright and framing. Chuck it through a decanter and eat it with kangaroo steaks.
