Here is a Fiano where building texture and palate complexity has been a key part of maximising what this increasingly popular Italian variety can do in Australia. The texture comes from regular lees stirring and then a small amount of pressings being added back. But loses nothing in its liveliness and vibrance revealing slightly nutty citrus characters with just a faint stone fruit depth. Super drinking wine now.
