Bruised apple, baked citrus, and warm lime on a nose that is shy at first, but gradually warms up to you. A very generous and lasting palate is shot through with highlights of minerality and the flavours of lime juice, crushed quartz and acid gushes like an underground spring from the back palate. There’s a savoury, almost meaty and herbal edge at the finish, (sage, mint, maybe a suggestion of fresh rosemary) communicating to me what I should be eating with it. Roast lemon chicken it shall be then. Save a little splash for the gravy if you can hold back.
