The miraculous pilgrimage of Riesling can be found here. It’s hard to taste young Riesling and imagine just how it can evolve, change, adapt and become this toasty, oily, wildly provocative drink. The team at Pewsey Vale know this and Louisa Rose thrives on its evolution. Here you find yuzu oil, greengage plums and ginger skin. Buttered toast, dried pineapple and rye seed. It’s dry but full to the brim of sandy texture and then a whip of bright acidity to clean everything up. Just mesmerising, and well worth buying more than you anticipate. Serve with artichokes in lemon butter and rejoice.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career.
