Give this wine a couple of spins in the glass to release its inner herbal layers. It’s a slightly different Adelaide Hills interpretation of the Austrian white grape with an almost raw herbal energy especially on the finish, replacing some of the usual floral/spiciness associated with the style. Sugar snap pea, rocket and lovage combine nicely with apple and green pear to bring a definite ‘green’ tinge to the flavour profile. A small portion was fermented in oak, another point of difference with this wine. Acidity remains keen but doesn’t dominate or look out of balance thanks to good fruit intensity.
