Anyone keen to see what excellent Chablis offers need look no further. Vaillons is one of the legendary Premier crus of this fabled region. This wine comes from 45 year old vines, with a natural fermentation, followed by ten months maturation in stainless steel. A gleaming deep straw, the wine has concentration and focus. Stone fruit, peaches, apricot kernels, citrus, a hint of limes especially, and some exotic spices all combine on the nose. Vibrant acidity here, balance and length. There is early evidence of the complexity to come. Impressive stuff. Enjoy over the next six to ten years, over which time it will surely continue to improve.

Ken was born and bred in Brisbane, Queensland. He had a non-trendy, perfectly happy childhood, in a family convinced alcohol meant instant condemnation to Hades. When not writing, fly-fishing for trout in NZ or bonefish on the flats of Cuba, travelling or smoking cigars, he is no doubt following a variety of sporting teams – the occasionally glorious Queensland Reds rugby, the dysfunctional Washington Redskins, the dodgy Arsenal and especially revels in the world restored to its proper axis with the return of the Ashes to their rightful home.
