Crafting great sparkling wine takes time and patience. It takes years for wines to build that complexity seen in the best vintage Champagnes and sparkling wines, like this Rotari Brut from Trentino in Northern Italy.

The Rotari is made from the classic blend of Chardonnay and Pinot Noir. Then it spends two years on its yeast lees and then another four years in bottle giving layers of french pastry fruit character not unlike vintage Champagne, with even a touch of vegemite. It’s powerful, savoury and crisp too, making for a very serious sparkling wine which is super value.
