Crafting classy pinot noir can be hard work with this variety particularly fussy about where and how it is grown. The key is a cool climate which in Western Australia means Great Southern. Here the nearby Southern Ocean keeps the heat at bay, even in the middle of Summer. It also helps to create some super-savoury pinot noirs. This example is mid cherry red in colour with layers of earthy aromas – autumn leaves, spice and soil under which sits sweet red cherry and toasty oak. It is followed by an acid driven palate – green herb and stalky flavours over red fruits with a slight meaty edge. It’s complex for sure and suits early drinking.
