Xavier Bizot’s Crayere’s Vineyard in the terra-rossa and limestone country of South Australia’s Wrattonbully region has been a beloved source of the expat French man’s (now SA based) unique expression of Sauvignon Blanc for 17 years. This style is made in select years only, and is no ordinary Sauvignon, presenting instead with a faint licorice edge to the nose, fennel flower perhaps, and an engaging depth and richness in the palate, the fruit notes no longer simple tropically toned and more taking in suggestions of lime leaf, apple, pear and yellow grapefruit flesh and peel. The highlights continue with a rich and rounded palate, creamy and nutty almost, with a charge and energy in its foundations, acidity, length, mouthfeel all adding depths rarely witnessed in the variety. It’s a do-yourself-a-favour Sauvignon Blanc that changes the varietal game somewhat, and stays and stays and stays. Fish or chicken in rich sauces will rise to the occasion.
