Wills Domain Eightfold Shiraz 2021

Brings a real sense of savouriness to the glass which, combined with pronounced tannins, immediately conjures up visions of accompanying foods. Maybe eggplant parmigiana or a slow-cooked lamb? This is a wine that, while rich and expressive, is no stand-alone entity. It would appreciate company at the table. The nose is pitched between earth, cured meats and graphite on the one side, and black fruits, bramble and spice on the other. They meet on the palate, a coming together that brings with it, complexity. They are firmly layered, melded by gravelly tannins and a notable oak presence. Plenty of savoury attitude here, but it works.
