93% Grenache and 7% Shiraz into small open fermenters for 12 days followed by 12 months in puncheos and barrels. Black Christmas cherries, figs and sloe berries. A touch of cranberry brightness with soft baking spices like cinnamon, cumin and nutmeg powder. There is a subtle rose floral note that’s attractive and lingers throughout. This is not the candied medicinal style you might see from other young vines but refined, silky and mature. It drinks like a fine wine with muscular tannins that shape the wine into a multidimensional tasting experience. Drink now and will cellar for another 3-5 years. A sandy, ethereal number that’s built for drinking with beautifully pink venison or a pork terrine.
