Equally unexpected in its fruit profile as it is joyfully comforting in its presence. Baked apple, raw quince, pencil shavings and yellow pear. It has plenty to give. In the mouth, the aromas become flavours, with the addition of wet stone, more yellow apple and wax. Firm acidity keeps the riper spectrum of fruit in its place, while the phenolics are chalky and the mid-palate is buffered. The finish is long.I would be inclined to suggest a crab feast. Something about the brightness and excitement of this wine calls for interactive eating — and a bib.
