This is a Cabernet in two parts. Just opened, the wine sits quietly in the glass, unassuming, not daring to reveal. Is that it, you ask yourself? The answer is no. I left the wine. Actually, I forgot about it and an hour or more later I returned. After being open for a while, a deeper, richer vein of Cabernet flavour revealed itself, one of concentrated black fruit intensity, herbals, leaf and gentle spice. Tannins were well-knitted and firm. The wine had become fully energised and alive. It was delicious . . . eventually. What a chameleon.
