A consistently impressive traditional method sparkling and graces many of the top wine lists of this country. The 2017 is made up of 60% Pinot Noir and 40% Chardonnay from the Wombat Creek vineyard with an impressive 6 years on lees and 3g/l dosage. Green apple skin curls, lemon balm and white peaches in syrup. The palate abounds with grapefruit, lemon curd and honeysuckle with persistent soaring acidity and a long white chocolate, nougatine finish. Golden syrup oozing through baked crumpets, this is less messy and just as indulgent. A wine with plenty of years ahead of it, drink now or will cellar for another 5 years. Drink with scallop bathed in browned butter in the half shell. A stella wine to stock up with for Christmas festivities.
