Fermentation for this fresh and zippy Prosecco was with natural yeasts over four weeks. The team leave a little residual sweetness in the wine to help it fill out. This works as the wine is well balanced, leaving a clean and bright impression on the palate. A very pale lemon, there is plenty of fresh citrus here, lemons and grapefruit, with florals and hints of crisp, green apples. A wine of medium length, with a firm finish and vibrant acidity while green apple flavours really come to the fore on the palate. There is a minerally, chalky backing, but it is that flick of gentle sweetness which fills out the wine and gives it a most pleasant finish. Drink over the next two years.

When not writing, fly-fishing for trout in NZ or bonefish on the flats of Cuba, travelling or smoking cigars, he is no doubt following a variety of sporting teams – the occasionally glorious Queensland Reds rugby, the dysfunctional Washington Redskins, the dodgy Arsenal and especially revels in the world restored to its proper axis with the return of the Ashes to their rightful home.
