100% Cabernet sauvignon from Colbinabbin Estate in Heathcote. It’s a lovely wine that announces itself well with a beautiful nose of black fruits (blackberry, mulberry and black cherry), a touch of smoke and some dark choc. The palate is silky, concentrated and flavourful, with teeth-coating juice and chewy tannins. It also needs quite a bit of air to show its best but it’s worth the wait, and if you can wait any longer to open subsequent bottles, they should go for at least another 5-8 years.
