100% Cabernet all from Heathcote, the yield from the 2024 season was typically low, under two tonnes per acre. The vineyard which provided this fruit was the Colbinabbin Vineyard. The grapes were destemmed and fermented in stainless steel, before a cold soak for eighteen days. Pressing was into French oak barrels, 21% of which were new, and maturation was for one year. Under Diam. An opaque maroon, this is richly flavoured. Save this one for your best wagyu, not just your mate’s barbie (no disrespect to your friends). The nose gives us notes of blackberries, blueberries, coffee beans, bay leaves and aniseed. There are notes of vanillin oak evident, which has integrated impressively. The wine has both balance and length and maintains its intensity throughout, finishing with fine tannins. So much to like here. Enjoy this over the next ten to fifteen years.
