Italy only recently approved the Prosecco Rose D.O.C. in May of 2020, and Babo were purportedly one of the first to import one to Australia. The 2020 is a blend of 89% Glera and 11% Pinot Nero and is brut in style with 8 grams of residual sugar. It’s lovely pale salmon and copper hued colour is an enticing start. Aromas of rosewater, musk, strawberry coulis, peach, tangerine, and a glimmer of sea salt. A tingling mousse brings foamy lift through the palate, and there’s a lovely bite of bitterness intermingling with peach skin, rosewater, musk, and brine. A chalky texture with grippy phenolics furthers the bitter edge, attractively so, before peach and tangerine fruit carry long with a brisk acid line. This is bright and fresh with lovely tang, and a gastronomic nuance. Importer: Bibendum Wine Co.
