This wine is a journey of elegance and restraint. Using traditional Champagne varieties, Chardonnay (55%) and Pinot Noir (45%), it opens with aromas of lemon zest and grapefruit pith. Two years on lees (ageing on yeast in the cellar) contributes a gentle waft of freshly homemade shortbread biscuits. As it breathes and warms slightly in the glass, the Pinot Noir reminds you of its presence with white strawberries and pink lady apples. Fine bubbles release bursts of green apple and yuzu in the mouth with crispy, refreshing acidity. The finish is long and dry with a slightly chalky texture that offers pairing options beyond the aperitif.

Nicole loves wine. So much so that she gave up a successful career in Pharmacy, perfected her spitting technique, and moved from sunny Queensland to the wine-drenched laneways of Melbourne. Stints in hospitality, wineries, retail, sales and marketing filled the next few years while Nicole built her knowledge and searched for the right path.
