This is such a charming Barossa rosé; it possesses great fruit expression. It is sustainably made with organic and biodynamic grapes of Mataro and Grenache. Inviting notes of grapefruit and pink lady apple offer an appealing bouquet, with a whiff of freshly opened marshmallows adding further interest. The palate has weight and density with a savoury dry finish and fresh acidity. A truly gastronomic rosé style with the wild fermentation producing a wine of great depth of flavour. It has blood orange and watermelon touches with a fresh creaminess on the palate. I served the wine alongside a Mediterranean platter of prosciutto, salami, green olives, feta, crackers, brie, and truffle goat’s cheese — a perfect matching. The wine’s structured finish and savoury textures made the experience a complex and interesting sensorial pairing – in fact a real feast! Every element of the platter synced in harmony with the wine’s flavours, producing a vibrant cranberry finish.
