Whole bunch fermentation is used for showcasing the steep aspect of the Uley vineyard Pinot Noir. Ripe wild strawberries, musk berries and dried raspberry straps. Lavender and rooibos bush. There are autumnal dried leaf notes followed by powdered cumin and cinnamon. Terra cotta and rosehip. Surprisingly dry tannins and acidity that jogs along without interrupting the sturdy structure. For me, this is the pleasure of the wine, savoury cedar notes, chewy licorice root tannins and the juiciness of ripe red berried fruit that circles back on the finish. Impressive stuff. Drinking well now but will cellar well between 3-6 years. Serve alongside Veal scallopini.
