Savoury at seven years of age. Opens with charry cedar, cured and grilled meat before settling into pine mushroom, jus, and black pepper. Plum and cherry conserve linger in the background, but aromatically this is firmly savoury. Fruit plays a stronger role on the palate—dark cherry, blood plum, and blackberry atop black olive tapenade, black pepper, and mushroom/earth inflections. Grainy tannins coil around, framing medium length. A ‘drink now’ proposition, but savoury notes will shine with meat and mushroom-based dishes.
