Byron and Harold The Protocol Shiraz 2021

The fruit for this superb Margaret River Shiraz was destemmed into static fermenters, followed by degrees of barrel fermentation. It then enjoyed an extended period of further barrel maturation. The colour is purple/magenta. Aromas of spices, chocolate, cassis, black fruits, bay leaves, cigar boxes and cocoa powder are woven together. Very much a savoury style, there are flavours of bergamot, blackberries and tobacco leaves on the palate. Good acidity, impressive length and a well-constructed structure ensure that this wine will provide excellent drinking over the next eight to ten years.
