Up in the northern reaches of McLaren Vale, into the gorge of the Onkaparinga River, a natural amphitheatre vineyard on the Chapel Hill estate is home to this gorgeous Chardonnay. It’s been cared for intently on the vine and in the winery, whole bunch pressed, wild fermented, given 9 months in larger French oak puncheons, 17% new. The wine repays its attention to detail with generous varietal stone fruit flavours, woody oak spice, some ginger nut biscuit, and evolving complexities in the finish. A genuine pleasure to drink across fine dining to simpler fare like chicken sandwiches.
