An assemblage of champagne grapes in a still wine on red granite soils in Tumbarumba, I already like where this is going. Crown sealed bottle with a line drawn face looking out from the label, perhaps a nod to the minimalist intervention approach. 

The Oxygen white is familiar in a way only wine lovers will know. The way great champagne is drunk by us; flat, warm or any way you can get it. This wine has the hallmarks of all three varietals. Bright lemon curd, golden apple and crème fraiche with a warmed butter and praline biscuit element. Its juicy but creamy and finishes dry and nutty. A wine for thought and an array of quirky pairings. Artichoke barigoule, truffled mac and cheese, chicken nuggets and sweet and sour sauce in the car at midnight in a dodgy carpark, count me in.
