De Bortoli Sparkling Pinot Noir Rosé NV

Fizz made from Pinot Noir sourced from the Yarra Valley, parcels were fermented discretely and given five months on lees before the secondary fermentation. Dosage is seven grams/litre. A very pale orange pink with notes of florals, redcurrants and spices, with hints of cherries and strawberries. This is a gentle and delightfully elegant style of fizz, with a creamy texture that is finely balanced with a crisp finish. There is a chalky, minerally backing here with a lingering finish. Delicious drinking now and for the next couple of years.
