Part whole berry, part whole cluster, the ferment is finished in oak puncheon, followed by a dirty rack and 10 months on fine lees in barrel. Still a little closed, but there is plenty tucked away in this pocket of deliciousness. A concentration of black fruits, mulberry, pastille, boysenberry and plum are stirred into the mix with liquorice strap, mixed spice, red earth, slate and ferrous ink. The fond scent of well-loved garden tools after they have spent a damp evening wedged in the dirt. This is a multi-site balancing act of fruit, with a delicious tightrope of acid, strung taut with a plinth of oak on either side. Pure yum.
