Wild by name and nature, this is a wild yeast fermented Sauvignon Blanc that’s matured on lees for 10 months in 1/3 new oak. The aromas are powerful plumes of yellow guava, blackberry leaf and white peppercorn. Pulled paperbark, nutmeg skin and candied lime zest. The exotic journey continues on the palate with ripe fruit that also twists and turns into fragrant Vietnamese mint, sage and fennel. This is demonstrating how intriguing, savoury and fulfilling Sauvignon Blanc can be and it’s a wonder of wine. Try this with a nori roll of avocado and fatty tuna belly, and prepare to groan in pleasure.
