Fruit is from a single 40-hectare vineyard operation that brings together the iconic Dixons Creek Estate and the adjacent former Mandala vineyard, originally planted by the Henkell family in the 1980s. Quite the floral wine showing Acacia and mock orange blossoms on the nose. Lemon pith, crab apples and white nectarine are cradled by some soft bakery rolls and almond nougatine. This really shows off the pristine Chardonnay fruit and dazzles with its elevated acidity and fine creamy tonic like bubble. A beautiful wine to demonstrate the debut release and Martin Siebert dedication to craft sparkling wine. This screams for the very best white anchovies on toast points.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career. Shanteh hosts her own weekly podcast ‘Over A Glass’ with the Deep in the Weeds Network and spends her time writing for various publications and judging at numerous wine shows across the country.
