Fruit is from 50 year old bush vines in Koonunga region, 30% was fermented as whole bunches and aged in one third new oak puncheons for 12 months. The astonishing aromas of this wine will have you spell bound. Cherry liqueur, magnolias in full bloom and wild strawberries. Dehydrated raspberry dust and terra cotta clay. Fruit is ripe but less candied on the palate, with some birch sap and orange bitters, a gentle but pooling wave of acidity with brown baking spices on the finish. This is clearly Barossa and clearly from a significant site, it’s been very well articulated in the winery, with its skeleton just as important as its fruit weight. This ensures that it drinks well on its own but has the ability to age for the next 8-10 years further. Perfect for prosciutto wrapped chicken breasts in the oven.
