Methode traditionelle style sparkling. Chardonnay with a small portion of Pinot Noir addition before secondary fermentation. A rose gold hue in the glass, the wine sings with persimmon and baked rhubarb. Dried cherries and baked madeleines. Some yellow plum and pie crust. Acidity is rolling in waves and carries the autolytic characters along for the ride. A chew to the toffee praline finish. This is in a lovely drinking window now and with a quiche lorraine would go down a treat. Drink Now.
