100% whole bunch, foot stomped, wild ferment and matured in older puncheons. Punchy is the word and the gesture used to describe this wine, it’s right up front in your face with thistle, creeping ivy and a bouquet garni of dried herbs and just when you almost step back from the collision you are greeted with the gentle caress of blood plums, rosella and bay berries. The interaction of whole bunch and supreme fruit quality is seductive to say the least, not to mention the ethereal line of natural acidity and powdery plumes of silty tannins. Wow, this will turn some heads in its time. Drink now or will cellar well for another 3-5 years. A nice pairing would be a lump of charred eel nigiri.
Shanteh cut her teeth at Sydney’s Award-Winning Quay restaurant where she worked for over a decade and was Head Sommelier from 2018 till 2022. She has been nominated for the Good Food Guide Sommelier of the Year award on three occasions and claims that her experience as a Len Evans scholar as one of the highlights of her career.
