Lemon aspen, winter melon and candied lime zest. A touch of green apple curls and elderflower. A tingling line of fresh acidity is punctured with some lemon and nectarine sweetness, with some raw oats and almond shell adding layers of delicate spice and creaminess. This is flavour-town from start to finish with a smack of dryness on the finish, it’s beautifully weighted and with a couple of years bottle age has settled well into its character. Ginger jellies and quince paste too. Drink now or will reward with another 5-10 years in your cellar. For now some miso butter scallop roasted in the half shell will do nicely.
