The Bellarine Peninsula’s maritime climate is a major influence on chardonnay style here, but so too the use of whole bunches, wild yeasts and 10 months in oak. The aim is to achieve complexity and it’s achieved in the range of flavours, textures and above all, structure. This single vineyard chardonnay has structure to burn.
