The Adelaide Hills is home to many of Australia’s top Sauvignon Blancs thanks to its cooler climate and also humidity which gives the local wines an edge over much of the competition. This is a text book example – very pale in colour with bright aromatic fruits. There is guava and citrus with subtle freshly picked green herbs. In the mouth it is dry, crisp and juicy – with a touch of dried thyme on what is a long and elegant finish. Chill down and enjoy it young with smoked salmon topped with dill mayonnaise.
