Fruit is from the Murramong Vineyard in Gruyere. Wild ferment in 15% new French puncheons. Lees stirring for 6 weeks and matured for a further 8 months. Pomelo at its heart the wine displays sourdough starter, beeswax candle and roasted pine nuts. A touch of white donut peach and zippy acidity. A wine that dances about the place with great zeal and gusto and stays true to its citrus core and Yarra Valley fruit identity. A wine built for fresh gooey cheese smothered on toasted turkish bread. Drink now or will cellar well for another. 5 years.
